If you’ve been reading my blog for a while, you might remember back when I used to do Five Fun Things on Friday.  Every Friday I wrote those posts about things I’d spotted on the web and sometimes a little about what was happening in my life.  I enjoyed sharing things that way, but eventually it got to be a burden to do it every Friday and I switched to Phase One Fridays, which I’m really committed to now because of how it perfectly fits the overall purpose of the site.
 
But lately I’ve been missing the opportunity to share things just for the fun of it.  After thinking about it for a few weeks, I’ve decided to do Things I’m Thinking About posts occasionally, probably not every week, and not always on the same day of the week, but when I find enough worthwhile things for a post I’ll share them.  Of course, I’m always thinking about food, so let’s start this first one out with the amazing-looking Chopped Brussels Sprouts Salad with Creamy Shallot Dressing shown above from Pinch of Yum.  The salad has a few ingredients that aren’t especially SBD friendly. (Like bacon!  Did I mention there’s bacon?) There’s also a lot of juice in the dressing that would make it high in sugar, but I think it would be fun to try coming up with a diet-friendly version of this salad.

It’s the season for Latkes, and when I saw this recipe for Latkes/Potato Pancakes from my friend Lydia at The Perfect Pantry I realized I’d only eaten them once!   Nowdays something made of potatoes would be a very rare treat for me, but I think these Brussels Sprouts Latkes from What Jew Want to Eat look intriguing!

I’m always spotting delicious-looking and low-carb baked goods at All Day I Dream About Food, a blog written by my friend Carolyn who’s living well with Type 1 Diabetes.  This time it’s her Low Carb Walnut Cardamom Snowball Cookies that have me drooling on my keyboard.
 
I love the way the web makes it easy to share stories about people who do inspiring things, and this story from YahooShine about What Happened When a Man Stole This Woman’s Wallet really moved me.
 
If you drink coffee and have a Keurig coffeemaker, did you know about San Francisco Bay Bio-Degradable Keurig Cups?  No more Keurig guilt about all those little cups clogging up the landfills.  (Thanks to my brother Rand for sharing this with me!)
 
And finally, The Book List Challenge.  I’m a pretty avid reader, but I’ve only read about a third of these “must read” selections (and my own list of 100 books everyone must read would include a lot of things that aren’t mentioned here.)  How many of these have you read?
