Twenty-five deliciously healthy low-carb recipes from June 2014, from Kalyn's Kitchen and my favorite blogs.

It's the first day of a brand new month, and since March 2008 I've been starting each month with a round-up of South Beach Diet Phase One Recipes found on Kalyn's Kitchen or spotted on other blogs.  It's been a fun way to feature healthy recipes from my favorite blogs, but six years later I now have readers who follow many different types of low-carb eating plans and the South-Beach only focus was feeling restrictive. That's why I announced last month that I'd decided to change it up a bit.  So what has changed, and what's staying the same?

What's changed:
  • I'm focusing on strictly Low-Carb Recipes with the new format, so South Beach Diet Phase One recipes with beans and legumes will still show up on the blog, but they won't be included in these round-ups.   
  • The new format is limited to the top 25 recipes I find every month. 
  • I'm no longer going to take submissions from other bloggers (but if you have a blog that focuses on this type of recipe you're welcome to let me know about it in an e-mail and I might start following you!)
  • In the new format, every recipe is going to have a photo.  (That's a bit more work, so let me know in the comments if you like seeing the photos!)
  • Right after the recipe link I'll share which specific diets I think each recipe is suitable for.  (Be gentle with me if I make a mistake, I am not an expert on every diet plan.  I'm going to focus on South Beach Phase One, Paleo, and Whole 30 diets, and I'll also indicate if recipes are Vegan or Vegetarian.)

What's Staying the Same:
  • All recipes featured in the monthly round-ups will still be grain-free, and therefore all are gluten-free.
  • I'm going to occasionally share things that might not strictly fit South Beach guidelines but are things I might eat myself for Phase One.  (Those cautions will be indicated after the recipe link.  Just ignore those recipes if you're a letter-of-the-law South Beach follower!)
  • I don't share recipes that are sponsored posts or where the actual recipe isn't located on the blogger's own site.

Spinach Artichoke Spaghetti Squash from Taste and Tell.  (Low-Carb, Gluten-Free, Vegetarian.  I would eat this for South Beach Phase One, but it's probably a little high in fat for South Beach guidelines.)


Chimichurri Chicken Salad from Healthy Seasonal Recipes.  (Low-Carb, Gluten-Free, South Beach Phase One, Paleo, Whole 30.)


Roasted Eggplant with Lemon Tahini Dressing from Budget Bytes.   (Low-Carb, Gluten-Free, South Beach Phase One, Paleo, Whole 30, Vegetarian.)


Roasted Barramundi with Tomato and Olive Relish from Kalyn's Kitchen.   (Low-Carb, Gluten-Free, South Beach Phase One, Paleo, Whole 30.)


Crustless Brie, Vegetable, and Egg Bake from Recipe Girl. (Made with milk: Low-Carb, Gluten-Free, Vegetarian.  Brie is high-fat for South Beach but I would still eat this for Phase One.)


Zucchini Ribbon Salad with Serrano-Lime Dressing from Tasty Eats at Home.  (Low-Carb, Gluten-Free, South Beach Phase One, Paleo, Whole 30, Vegetarian)


Cheesy Aubergine (Eggplant) Stacks from Amuse Your Bouche. (Low-Carb, Gluten-Free, Vegetarian.  With reduced-fat ricotta: South Beach Diet Phase One.)


Roasted Cauliflower Salad with Italian Sausage, Tomatoes, Kale, and Basil Vinaigrette from Kalyn's Kitchen.  (Low-Carb, Gluten-Free, South Beach Phase One.)


Salmon Lettuce Wraps with Cucumber, Jicama, and Ginger from Simply Recipes.  (Low-Carb, Gluten-Free, South Beach Phase One, Paleo, Whole 30.)


Baked Goat Cheese Salad by Lil Blue Boo.  (Low-Carb, Gluten-Free, South Beach Phase One, vegetarian unless you add optional chicken.)


Grilled Stoplight Vegetable Skewers with Halloumi from Craving Something Healthy.  (Low-Carb, Gluten-Free, Vegetarian. With portion control on the Halloumi: South Beach Phase One.)


Double Broccoli Salad with Almonds and Sriracha-Yogurt Dressing from The Perfect Pantry (Low-Carb, Gluten-Free, Vegetarian.  If approved sweetener is subbed for agave nectar: South Beach Diet Phase One.)


Italian Zucchini "Pasta" Salad from Inspiralized.  (Low-Carb, Gluten-Free.  If made with  lower-fat cheese and sausage: South Beach Phase One.)


Leftover Chicken Salad with Mustard, Hearts of Palm, and Olives from Kalyn's Kitchen (Low-Carb, Gluten-Free, South Beach Phase One, Paleo, Whole 30)


Green Bean and Balsamic Salad from Kayotic Kitchen.   (Low-Carb, Gluten-Free, South Beach Phase One, Vegetarian.)


Cumin-Dusted Strip Steak with Salsa Verde Butter from I Breathe I'm Hungry. (Low-Carb, Gluten-Free.  This is high in fat for South Beach, but I would eat it as a "once-in-a-while-treat" for Phase One.


Zucchini Petals Frittata from Apron Strings  (Low-Carb, Gluten-Free, South Beach Phase One, Vegetarian)


Power Greens Breakfast Casserole from Kalyn's Kitchen  (Low-Carb, Gluten-Free, South Beach Phase One, Vegetarian)


Slow Cooker Garlic Beef with Cauliflower Mash from Laa Loosh.  (Low-Carb, Gluten-Free, South Beach Phase One.)


Thyme-Rubbed Salmon with Cauliflower "Risotto" from Sidewalk Shoes. (Low-Carb, Gluten-Free; the recipe has a little heavy cream but I would eat this for South Beach Phase One.)


Chopped Kale Salad with Gorgonzola and Dijon Yogurt Dressing from Cookin' Canuck.  (Low-Carb, Gluten-Free, South Beach Phase One, Vegetarian.)


Spiralized Greek Cucumber Salad with Lemon and Feta from Skinnytaste. (Low-Carb, Gluten-Free, South Beach Phase One, Vegetarian.)


Cuban Flank Steak from Kalyn's Kitchen.  (Low-Carb, Gluten-Free, South Beach Phase One.  If Coconut aminos are subbed for soy sauce: Paleo, Whole 30.)

I have been following for several years. I love your site in general but I am excited about your new changes. I am currently trying my best to give up grains. I also love that each one has a photo. We often eat with our eyes first. If it looks great than its must try.
