Twenty-Five Deliciously Healthy Low-Carb Recipes from July 2014, from Kalyn's Kitchen and my favorite blogs.

I've been waiting months for it to be August 1, and by the time you read this I'll either be on a plane flying to Seattle or already on a cruise ship headed for Alaska!  I'm excited to visit a part of the world I've never seen, and relaxing on the ship will be my main plan for the next week.   I'm not sure how well I'll keep up on comments on the blog and on social media, so if you don't get an answer as quickly as usual I'll catch up on that when I get home.  

I've been working hard so I could leave you a round-up of enticing recipes to explore while I'm gone, and I'm thrilled with the variety of dishes I found for this month's collection of 25 Deliciously Healthy Low-Carb Recipes.  (If you saw the round-up from last month, it explains how I've decided to expand the focus of my monthly round-ups a bit.  Read that post if you want more details about what's changed.)  As usual, photos are from the blog linked to the recipe; see after each photo for my notes about what types of eating plan I think that dish is suitable for.  Enjoy!

Cucumber Ribbon Salad with Peppers, Radishes, and Thai Dressing from Kalyn's Kitchen.   (Low-Carb, Gluten-Free, South Beach Phase One.  If you omit peanuts and choose the right ingredients this can be Paleo or Whole 30.)

Radish Avocado Salad in 15 Minutes from Best Recipe Box.  (Low-Carb, Gluten-Free with GF soy sauce, South Beach Phase One.  Can be Paleo or Whole 30 with coconut aminos instead of soy sauce.)


Chicken Salad with Basil and Parmesan from Kalyn's Kitchen.  (Low-Carb, Gluten-Free, South Beach Phase One.)


Zucchini Chips from Never Enough Thyme.  (Low-Carb, Gluten-Free, South Beach Phase One, Paleo, Whole 30.)

Creamy Cucumber Salad with Goat Cheese and Dill from An Edible Mosaic.  (Low-Carb, Gluten-Free, South Beach Phase One.)

Grilled Fusion Chicken from Kalyn's Kitchen.  (Low-Carb, Gluten-Free, South Beach Diet Phase One.)


Mediterranean Boneless Pork Chops from Skinnytaste.  (Low-Carb, Gluten-Free, South Beach Phase One.  Could be Paleo or Whole 30 if you omit the Feta.)


Zucchini Noodles with Slow Roasted Tomatoes and Cream from Proud Italian Cook.  (Low-Carb, Gluten-Free.  This has butter and cream, both of which aren't officially approved for South Beach Phase One, but there's not a huge amount per serving and I'd eat this for an occasional treat.)


Thai-Inspired Mahi Mahi from Cooking on the Weekends.   (This recipe has the tiniest amount of sugar which you could omit; otherwise it is Low-Carb, Gluten-Free, South Beach Phase One, Paleo, Whole 30.)


Zucchini Noodle Mock Pasta Salad from Kalyn's Kitchen.  (Low-Carb, Gluten-Free, South Beach Phase One.)


Eggplant Parmesan Stuffed Zucchini Boats from The Iron You.  (Made with almond meal: Low-Carb, Gluten-Free, Paleo, Whole 30.  I would eat this for South Beach Phase One, but almond meal is not officially allowed for that phase.)


Cilantro Lime Chicken from Laa Loosh.  (Low-Carb, Gluten-Free, South Beach Phase One, Paleo, Whole 30.)


Baked Eggs Skillet with Avocado and Spicy Tomatoes from Kalyn's Kitchen.  (Low-Carb, Gluten-Free, South Beach Phase One, Paleo, Whole 30.)


Cauliflower and Gruyere Gratin from Hungry Couple.  (Low-Carb, Gluten-Free.  This is a little high in fat for South Beach Phase One, but I'd eat it for an occasional treat.)


Grilled Cabbage Wedges with Spicy Lime Dressing from The Kitchn.  (Low-Carb, Gluten-Free, South Beach Phase One.  With approved fish sauce this is Paleo, Whole 30.)


Vegan Tomato Salad with Cucumber, Avocado, Cilantro, and Lime from Kalyn's Kitchen.  (Low-Carb, Gluten-Free, South Beach Phase One, Paleo, Whole 30.)

Love the new format. Each recipe's picture is so enticing and many thanks for including the diet info.I hope that your thoroughly enjoy your cruise. Cruised to Alaska last year and the vistas were spectacular!

can you sub something like swerve for the sugar in pickles? i thought the sugar was necessary for the pickling/fermentation process.

Dina that might be true in pickles that are canned in a bottle, but I don't think it would matter in pickled cabbage.
