Next time you end up with leftover chicken I’m encouraging you to make you this delicious Rotisserie Chicken Salad that has so many amazing flavors! And this delicious red-and-green salad that uses rotisserie chicken is tasty enough to serve as a special salad during the holidays, but it’s also a delicious salad any time of year.

Recently when we made this salad with chicken, red pepper, and avocado, we hit on the idea of adding a touch of Feta, which made this salad made with rotisserie chicken even more of a wow for us. Please, please, please do try this salad if you like these ingredients, no matter what time of year it is!

In fact, a couple of days ago I was working at the computer and I grabbed a small container of leftover salad from the fridge. And even though it had been in there for two days and I meant to eat it the day after we made it, I absolutely scarfed down the leftover salad! Trust me when I say this recipe is completely a winner.

Can you make the Rotisserie Chicken Salad without Cilantro?

For anyone who doesn’t enjoy cilantro, just use a bit more thinly-sliced green onion in the salad and it will still be delicious.

Can you make the Rotisserie Chicken Salad without Feta?

If you’re not fond of Feta, just leave it out and you’ll still have a tasty salad. This salad was adapted from Chicken and Avocado Salad that’s been such a hit on the blog, and you can’t go wrong with that salad either if you need ideas for rotisserie chicken.

How to Make Rotisserie Chicken Salad:

  1. Cut up enough rotisserie chicken to make about 4 cups. I made the chicken chunks rather large, take your choice on that.
  2. Chop up a large red bell pepper.
  3. Finely chop the cilantro and slice the green onions on the diagonal. (Just use more green onion if you’re not a cilantro fan!)
  4. Dice two avocados and toss with 1-2 tablespoons of lime juice.
  5. Whisk together the mayo, lime juice, and Vege-Sal (or salt) to make the dressing. Cut up the Feta into small cubes (or crumble if you prefer.)
  6. Toss together the chicken, chopped red bell pepper, and sliced green onion. Toss the chicken mixture with the desired amount of dressing.
  7. Then gently fold in the chopped cilantro.
  8. Then very gently fold in the Feta cubes and chopped avocado.
  9. You can season with a little salt if you’d like, but remember Feta is pretty salty if you’re using that.
  10. Serve right away or chill for a few hours.
  11. This will keep in the fridge for 1-2 days, although the avocado gets softer in the fridge, and of course it’s best freshly made.

Low-Carb Rotisserie Chicken Salad gets festive with Christmas colors and lots of delicious flavors from ingredients that are salad favorites!

Ingredients

  • 4 cups chopped or shredded rotisserie chicken (see notes)
  • 1 large red bell pepper, chopped
  • 1/2 cup sliced green onion
  • 3/4 cup chopped cilantro (see notes)
  • 2 avocados, chopped
  • 2 T fresh-squeezed lime juice, to toss with the avocado
  • 1 cup Feta cubes (see notes)

Dressing Ingredients:

  • 4 T mayo
  • 1 1/2 T fresh-squeezed lime juice
  • 1/2 tsp. Vege-Sal or salt (more or less to taste)

Instructions

  1. Shred or chop enough rotisserie chicken to make 4 cups diced cooked chicken.
  2. Chop the red bell pepper into pieces about 1/2 inch square.
  3. Cut up the avocado and toss with enough lime juice so all the pieces are coated.
  4. Thinly slice the green onion on the diagonal and finely chop the cilantro.
  5. Cut up the avocado and toss with enough lime juice so all the pieces are coated.
  6. Cut enough Feta to make about 1 cup of Feta cubes (if using)
  7. Whisk together the mayo, lime juice, and Vege-Sal (or salt), then taste to see if you want more lime or salt.
  8. Toss the chicken, chopped red bell pepper, and sliced green onion together in a bowl.
  9. Toss the chicken mixture with enough dressing to coat the ingredients.
  10. Then gently fold in the chopped cilantro.
  11. Very gently fold in the diced avocado and Feta cubes.
  12. Chill for a few hours or serve right away.
  13. This will keep for a day or two in the fridge, although I think it's best the first day you make it.

Notes

You can cook 3-4 chicken breasts and cut up the meat if you don't have rotisserie chicken. I used my fresh-frozen lime juice for this recipe. Just use more green onion if you're not a cilantro fan. You can use crumbled Feta if you prefer but I liked the symmetry of the chicken, avocado, and Feta all being cut in cubes.
