It's Friday, and time for some more Low-Carb Recipe Love. Again this week we have dishes that spotlight the wonderful flavors of summer; enjoy!
It's Friday so of course it's time for Low-Carb Recipe Love. But this Friday also starts the weekend of the official Utah state holiday, Pioneer Day. July 24 is the day the Mormon Pioneers arrived in the Salt Lake Valley back in 1847, so the day is celebrated every year with parades, carnivals, rodeos, fireworks, and all kinds of other festivities.
And that means a big family party for the Dennys! We have a tradition started by my sister Pam of attending the parade in our little town, and all the extended family members who don't go away for the holiday weekend will show up there. Then most of them (about 35 people this year) come to my house for burgers. And my house is situated directly above the school where our town shoots off fireworks, so most people stick around and watch fireworks from the deck.
There are even a few family members from out of town who will be there for the party this year, plus a couple of tiny babies that most people haven't seen, so we are extra excited. I'm going to make Caprese Tomato Stacks with Basil Vinaigrette (a variation of this recipe without the zucchini) as my effort to have something healthy on the menu, and it's a good bet there will be a lot of delicious offerings.
Other than me and a couple of my nieces, my family doesn't have a lot of low-carb eaters. But I bet I could get most of them to eat the tasty things being spotlighted in this week's recipe round-up. And all these dishes are loaded with good summer flavors and ingredients like basil, zucchini, tomatoes, and cucumbers, enjoy!

It seems like I'm always looking for some kind of easy low-carb lunch I can grab on the go so sometimes I make breadless sandwiches with just turkey and cheese, but these Low-Carb Smoked Turkey and Cucumber Sandwiches from The Kitchen is My Playground sound even better. Thin slices of cucumber replace the bread for a sandwich that sounds like a treat!
My love for zucchini noodles is pretty well documented on this blog, and when it's too hot to cook, nothing beats a simple bowl meal you can just toss together and enjoy. And anything with Pesto gets a nod from me as well, so I think this Zucchini Noodle Chicken Pesto Bowl from Elise at Simply Recipes sounds perfect for a hot summer day!
I love EVERYTHING about these Thai-Marinated Grilled Fish Fillets over Zucchini Noodles by Donna from Apron Strings. Donna used halibut for the fish, but she says any white fish fillets will work.
Another meal-in-a-bowl idea that I think sounds amazing is this Mediterranean Chicken Bowl with Turmeric Tahini Dressing from Everyday Maven. I don't know where to start gushing about this one, but how about a dressing that features both turmeric and tahini, plus chicken that's seasoned with Za'atar! Yes, please.
And from Kalyn's Kitchen, a tasty salad featuring basil! At my house I have a huge crop of fresh basil so I've been freezing fresh basil and making basil vinaigrette every few days. And when I have a lot of basil this Low-Carb Chicken Salad with Basil and Parmesan is one of my favorite salads to make for easy lunches!
