I'm sorry to remind you about it, but this is the last edition of Low-Carb Recipes Love on Fridays for the summer, because it will officially be FALL next Friday! And although I really do like fall, I know what comes after fall, so every year I'm sad to see the end of summer.
And even though it's technically still summer, the weather has already started to change in Utah, and I've been (gasp) using the oven. In fact in one of those oven-using recipes, I declared that I think September should be called Roasted Zucchini Month because there are so many good recipe possibilities that start with roasted zucchini.
I really do think zucchini is somewhat unique among summer vegetables for the way it seamlessly moves in to fall without skipping a beat, which is why I decided to focus this last Low-Carb Recipe Love post of the summer on late-summer zucchini recipes. And there are some real keepers in this collection.
I know there have been quite a few zucchini recipes happening lately on the blog, so my apologies to everyone who's not a zucchini fan. But if you do like zucchini and still have it in abundance, I hope one of the creations from this collection will make it on to your table before zucchini is just one of those summer memories that never last long enough.

I love the idea of using zucchini in a casserole when the weather gets a bit cooler, and these Pesto Zucchini Lasagna Roll-Ups from The Seasoned Mom look amazing. Look for a marinara sauce that's low in sugar to keep this recipe low in carbs.
Parmesan Crusted Baked Zucchini Fries from The Iron You in the heat of the summer, but now that you don't mind turning on the oven, don't they sound amazing? Dip in your favorite low-carb dip and you're good to go!
This French Onion Zoodle Bake from Climbing Grier Mountain definitely looks like fall comfort food, and this recipe has the flavors of French onion soup in a casserole. I would probably omit the one teaspoon of sugar or use an approved sweetener.
Philly Cheese Steak Zucchini Boats from Cooking Classy sound like another comfort-food idea with Zucchini, and Jaclyn says this has all the flavors of a classic Philly Cheese Steak Sandwich without the empty carbs from the bread.
One of the things I've been making for years to use those giant zucchini that show up in the fall is this Grilled Zucchini Low-Carb Lasagna that uses thick slices of grilled zucchini to replace the noodles, and if you have some big zucchinis, this is a must-try!
And I'm sneaking in one more recipe from Kalyn's Kitchen this week, because if you want an new idea for zucchini I highly recommend this super-easy recipe for Val's Kid-Friendly Broiled Zucchini with Mozzarella and Pepperoni from my sister Val. And if you don't have any kids to gobble it up, I'm sure the adults will make it disappear quickly.
