If you’ve been reading this blog for a while you might have stumbled on Mary’s Perfect Easy Dressing for Spring Mix Greens. That simple dressing from my friend Mary is the thing that helped me become friends with those tubs of Spring Mix Salad you see in every grocery store.

But when I have time to do more than splash on some olive oil, lime juice, and red wine vinegar, this Spring Mix Salad is the way I turn the spring mix salad into something good enough to serve to guests. And this is seriously good; I could eat this for lunch or dinner most any time of year without feeling deprived, because FETA and PINE NUTS!

Of course the variations are endless, but if you like both Feta and Pine Nuts I hope you’ll try my favorite combination at least once. And if you find another variation of a salad with Mary’s dressing that really helps you eat more salad, please come back and tell us about it in the comments.

What ingredients do you need?

  • Olive Oil (affiliate link), use good quality extra virgin olive oil for best flavor.
  • fresh-squeezed lime juice, I used my fresh-frozen lime juice
  • Red Wine Vinegar (affiliate link)
  • Spring Mix salad greens
  • crumbled Feta

What are Spring Mix Greens?

Spring Mix is a salad greens mix sold in U.S. grocery stores. It always contains some baby greens, which is why I think it has the word spring in the name!

Is this Spring Mix Salad low in carbs?

This recipe as written has only 5 net carbs per servings, so enjoy it often!

Can you make this salad recipe with other lettuce blends?

Spring Mix lettuce mix is common in U.S. grocery stores, but most stores also sell other lettuce blends that have more of certain types of greens like spinach, kale, or arugula. Any of those lettuce blends will also be great in this salad if you’re not a fan of the basic Spring mix.

What else could you add to Spring Mix Salad?

How to make Spring Mix Salad:

  1. Crisp greens in ice cold water in a salad spinner (affiliate link) while you prep other ingredients if desired. Spin and let dry very well. (Greens that are really fresh won’t need this step.)
  2. You can skip toasting the pine nuts if you want, but it only takes a second and it adds flavor.
  3. Whisk together olive oil, lime juice, and red wine vinegar to make the dressing.
  4. Crumble the Feta cheese.
  5. Put lettuce in a bowl, toss with dressing, add pine nuts and Feta, season with a little salt and fresh-ground black pepper and toss again, then devour!
  6. And if you’re using this recipe as part of a dinner for guests, serve it in a nice glass bowl and no one will ever guess the salad only took you minutes to make!

Spring Mix Salad

This Spring Mix Salad with Feta and pine nuts is a kicked-up salad using my friend Mary’s Perfect Salad Dressing for Spring Mix Greens.

Ingredients

Dressing Ingredients:

  • 3 T olive oil (Use good quality extra virgin olive oil for best flavor.)
  • 4 tsp. fresh-squeeze lime juice (see notes)
  • 1/2 tsp. red wine vinegar

Salad Ingredients:

  • 8 handfuls of Spring Mix salad greens, or your favorite mix of greens
  • 1/4 cup crumbled Feta
  • 2 T pine nuts
  • salt and fresh-ground black pepper to taste

Instructions

  1. Spring mix salad doesn’t usually need to be washed, but if you’re using greens from the garden or want to crisp the greens more you’ll need to wash them, preferably in a salad spinner (affiliate link). I like to pull off the prickly stems of the bigger leaves, but that’s totally optional!
  2. Whisk together olive oil, the lime juice, and the red wine vinegar. Taste the dressing and see if it seems too tart to you; if so add more olive oil a little at a time until you like the flavor.
  3. If you want to toast pine nuts, put them in a dry pan over high heat and toast 1 minute (or a little longer), shaking the pan the whole time. They get too done pretty quickly so turn off the heat before they start to get brown.
  4. Put the greens in a mixing bowl and toss with enough dressing to coat the greens. Add the Feta and pine nuts and toss again.
  5. Season to taste with salt and fresh-ground black pepper and toss again; then serve right away.

Notes

I use my fresh-frozen lime juice most of the time and I am happy with this olive oil from Costco, but sometimes I splurge for the really good olive oil for salads.
