Kalyn’s Kitchen Picks: Carb Chopper Whole Wheat Tortillas
Many people don’t realize that the South Beach Diet
isn’t really a low carb diet
. Instead it’s based on the glycemic index
, a measure of how quickly foods turn to glucose when they’re digested. Foods that quickly turn to sugar (like white flour, starchy white rice, potatoes, and of course sugar) are considered “bad carbs” on South Beach. Other relatively high carb foods like dried beans, whole wheat bread, and brown rice digest more slowly and are considered “good carbs.”
After the initial phase of the South Beach diet, you can actually eat quite a few carbs if you’re picky about the kinds of carbs you choose. After I became sold on the low-glycemic index way of eating, I found a few good products labeled “low carb” which were loaded with fiber and 100% whole wheat flour, perfect for anyone who’s trying to avoid empty carbs. . I’ve been eating these for a couple of years now, and I’m long overdue on spotlighting them as one of my Kalyn’s Kitchen Picks
. Whether you’re on a diet or not, these tortillas taste great! Keep reading to see some of the ways I eat them, plus a few recipes using tortillas.
In Utah, I used to have to buy these at Costco, and they came in rather large packages. Although they do freeze pretty well (keep in the original plastic bag and put inside a ziploc bag) I prefer to buy a smaller size. Now I can find them in Utah at Smith’s Food King (Kroger) and also Albertsons, the two stores closest to my house. If anyone else buys these at other stores, let us know in the comments where you find them.
Some Ideas for Snacking with Tortillas:
-Use the tortillas or tortilla chips to scoop up Hummus or guacamole.
-Make an easy quesadilla by layering cheese between two tortillas, then grilling in a frying pan. Eat with salsa and low-fat sour cream.
-Spread a tortilla with peanut butter, roll up and eat.
