Kalyn’s Kitchen Picks: Thai Kitchen Lite Coconut Milk
You can’t imagine how delighted I was when I found a reference to Coconut milk in The South Beach Diet Quick and Easy Cookbook. It was listed with foods in the front of the book, with a reminder to purchase light, unsweetened coconut milk. I’d been buying Thai Kitchen lite coconut milk for years, and love the interesting flavor it adds to soups and curries. The only thing I don’t like about this product is the spelling of the word *lite* which does grate on the teacher side of my personality a bit.
Thai Kitchen Lite Coconut Milk is widely available in U.S. grocery stores, and can be ordered from Amazon.com. I’m not sure how hard it would be to find in other countries, but if you can’t find it where you live, just look for the word “light” or “lite” on the brand of coconut milk you find, and check the label to be sure there’s not added sugar. (Don’t confuse this with coconut cream, an ingredient used in drinks which contains a lot of sugar.)
I used Thai Kitchen Lite Coconut Milk when I made this wonderful Thai Chicken Soup, a recipe that’s definitely one of my favorites of all the dishes I’ve cooked last year. Check back tomorrow for the latest recipe I’ve tried with this wonderful ingredient. I think it might be my favorite new recipe of 2007! Can you tell I love coconut milk!
