Slow Cooker Balsamic Pork Roast is a recipe I first made years ago, and I posted it with photos that were kind of ho-hum. And Food blogging can be so frustrating when you make a recipe that tastes great, but the photos don’t really show off how good the recipe is. 

So today I am SO happy to be updating this recipe for Balsamic Pork Roast with better photos! When we updated the photos we skipped the red onions that cooked along with the pork in the original version, Skipping the onions made this recipe lower in carbs, but I’m including that option in the recipe for onion fans.

I used pork loin roast for the updated recipe, which made a larger roast, But you can also make this with one of those very inexpensive and lean pork sirloin tip roasts that come in a four-pack at Costco. Get out your slow cooker and make balsamic pork roast! You’ll love this for an easy dinner idea.

Is Pork Loin Roast an inexpensive cut of meat?

There’s no doubt every type of meat is more expensive than it was when I first made this recipe. But pork loin roast is still a relatively inexpensive cut of meat and this will be great for a special dinner!

What size slow cooker did I use?

I used a Crock-Pot 3 Quart Slow Cooker (affiliate link) for this recipe, but a slightly larger size will also be fine.

How to Make Slow Cooker Balsamic Pork Roast:

  1. We started by making Rosemary Garlic Seasoning. (Just use the individual ingredients if you don’t want to make the rub.)
  2. Trim most of the fat from the roast.
  3. Then rub it on all sides with about one tablespoon of the rub (or individual spices and herbs.)
  4. Heat olive oil in a large frying pan and brown the roast well on all sides.
  5. Put roast in the slow cooker, then deglaze the pan with beef stock and simmer to reduce by half..
  6. Add balsamic vinegar, reduce heat to medium, and cook about 5 minutes.
  7. Pour that liquid over the roast in the slow cooker and cook for about 2 hours on high (or 4-5 hours on low).
  8. The pork is done when it reaches 145F-65C on an Instant Read Meat Thermometer (affiliate link). Start testing it after about 3 hours.
  9. Remove pork to a cutting board and let it rest about 5 minutes. (Cover with foil to keep warm if you like.)
  10. You might want to use a Fat Separator (affiliate link) to remove fat from the cooking sauce. You can also put liquid back in the frying pan and simmer to reduce for about 20 minutes so the flavor is a little more concentrated.
  11. Then slice the meat, and arrange on a serving plate.
  12. Serve Slow Cooker Balsamic Pork Roast hot, with the sauce.

Slow Cooker Balsamic Pork Roast

This Slow Cooker Balsamic Pork Roast features pork loin roast that gets tender and delicious when it’s cooked in the crockpot.

Ingredients

  • 3 lb. pork loin roast (see notes)
  • 1 T Rosemary Garlic Seasoning (see notes)
  • 1 T olive oil
  • 1 cup beef broth, simmered to reduce
  • 1/4 cup balsamic vinegar
  • 3 small red onions, cut into thick slices and separated into rings (optional)

Instructions

  1. We started by making Rosemary Garlic Seasoning to season the pork roast. If you don't want to make the rub, just use those individual ingredients.
  2. Trim most of the fat from the pork loin roast.
  3. Rub the roast on all sides with about one tablespoon of the rub.
  4. Heated the olive oil in a large frying pan and brown the pork roast well on all sides. (This will take 5-10 minutes; don't rush the browning step.)
  5. Put the roast in the slow cooker, then deglaze the pan with the beef stock scraping off any browned bits in the pan. Simmer until the stock is reduced by half..
  6. Then add the balsamic vinegar, reduce heat to medium, and cook about 5 minutes.
  7. Pour the liquid over the roast in the slow cooker and cook for about 2 hours on high or 4-5 hours on low. (Add sliced red onions on top of the meat when it's partly done if you're using them.)
  8. The pork is done when it reaches 145F-65C on an Instant Read Meat Thermometer (affiliate link); start testing it after about 3 hours.
  9. Remove pork to a cutting board and let it rest about 5 minutes. (Cover with foil to keep warm if you like.)
  10. You might want to use a Fat Separator (affiliate link) to remove fat from the cooking sauce, or put liquid back into the frying pan and simmer to reduce for about 20 minutes so the flavor is a little more concentrated. (Taste it and see what you think.)
  11. Then slice the meat, arrange Slow Cooker Balsamic Pork Roast on a serving plate.
  12. Serve hot, with the sauce.

I used a Crock-Pot 3 Quart Slow Cooker (affiliate link)) for this recipe, but a slightly larger size will work.

I originally made this with pork sirloin tip roast; use that if you prefer. I used Rosemary Garlic Seasoning, but similar herb blends will work.
